
Can I make royal icing with just egg whites and powdered sugar?
If I can, what’s the recipe? Please! All of the recipes I’ve seen say add cream of tartar which I don’t have. All I have are eggs, powdered sugar and vanilla extract.
Yes you need:
3 oz. of egg whites
1 tsp. vanilla extract
4 cups powdered sugar
In large bowl of stand mixer combine the egg whites and vanilla and beat until frothy. Add confectioners’ sugar gradually and mix on low speed until sugar is incorporated and mixture is shiny. Turn speed up to high and beat until mixture forms stiff, glossy peaks. This should take approximately 5 to 7 minutes. Add food coloring, if desired.
This will make you about 3 1/2 cups of icing.
